Vintage Year and Viticulture:
A cooler and wetter season than normal was conducive to creating aromatically integrated wines. The vineyards performed as expected, efficiently removing all the excess water through the vineyards under drainage. Harvest time fell on the 3rd of October. Yields averaged 4 tons per acre with the vines being 6 years old.
Winemaker’s Notes: The juice pressed from very clean, ripe fruit was used with selected yeast for cold-controlled, slow fermentation. The fermentation lasted for 7 days in stainless steel tanks to highlight the native fruit characteristics of this wine, and to maintain its excellent acidity.
Tasting Notes: This rare varietal is only grown in a handful of vineyards in Ontario and is also known as Trollinger x Riesling. With characteristic floral aromas and flavours, the bright acidity of this wine is complimented by the off-dry style in which it’s made.
Food Pairings: White fish, baked chicken, vegetarian quiches and salads.
