Vintage Year and Viticulture: The 2006/2007 winter was an average winter, in terms of temperature with no extreme cold spells. Seasonally higher summer temperatures, with quite hot and dry days, resulted in irrigation of the vineyard throughout the season. The end result was an exceptional vintage year. Sunny breaks in late October and early November along with warm temperatures, allowed the grapes to complete their ripening and harvest proved to be fruitful with excellent Brix levels and a balanced acidity.
Winemaker’s Notes: The grapes were harvested Oct 16, 2007 and the fruit was a blend from 5 year old and 14 year old vines. After pressing the juice was clarified with flotation technology and the clean juice was inoculated with a selected yeast strain for Sauvignon Blanc. Fermentation was completed in 10 days and further aging was done in stainless steel.
Tasting Notes: This food-friendly wine shows rich grapefruit and passion fruit aromas with subtle gooseberry notes. The palate is fresh and crisp with grapefruit and lime flavours, complimented by a zesty citrus finish.
Food Pairings: Pairs beautifully with shellfish, other mild, firm-fleshed fish, mild cheeses and vegetarian dishes.
